„Easter without Green Sauce is not Easter“
A variety of traditions and customs ensure joyful activities around Easter, the highest celebration of Christianity. In this interview, Nils Vollmann from Heidelmann tells us how he celebrates Easter with his family and what is not to be missed.

Mr. Vollmann, good food is usually a big deal at Easter. What do you serve at Easter in Hesse?
Nils Vollmann: „At Easter, the whole family always comes together. Of course, good food is not to be missed. We always have something typically German: Green Sauce with eggs and boiled potatoes. Everyone loves the dish!“
Why exactly is it your favourite dish at Easter?
Nils Vollmann: „This dish has a long tradition in our country. Easter without Green Sauce is not Easter. Besides, it is a good opportunity to use the colorful eggs collected over Easter.“
What makes it typical for your region?
Nils Vollmann: „The regional cultivation of potatoes and herbs and the fresh eggs are typical for the rural area, therefore also for our region.“
When did you eat your favorite Easter dish for the first time?
Nils Vollmann: „I really have to think back a long time. We always had this dish at my grantparents at Easter. The first time I ate it was more than 35 years ago.“
How do you celebrate Easter? What are the special traditions in your country?
Nils Vollmann: „Traditionally, the weekend before Easter we go for a walk in the forest. During the walk, the children collect moss from the trees to build the Easter nests. The constructions become more and more spectacular every year. Afterwards, of course, we have green sauce with eggs and boiled potatoes. The whole family is always looking forward to this to this.“
Do you have an amusing Easter experience to share?
Nils Vollmann: „Traditionally, on Easter Sunday, we hide painted eggs and candy in the garden for the kids to find. A few years ago I let our dog out in the garden in the morning of Easter Sunday, notremembering that the treats were already hidden. You can guess the outcome of the story ... I can reveal: The dog has found the hiding places before the children and the disappointment with the children was accordingly huge.“

Green Sauce with eggs and boiled potatoes (Hesse, Germany)

Ingredients:
1 kg potatoes, waxy
Salt
2 handful of mixed herbs, e.g. burnet, parsley, cress, chives, borage, chervil, sorrel
200 g sour cream
150 g yogurt
2 tbsp. lemon juice
2 tsp. mustard
Pepper; grounded
4 eggs
Preparation:
Wash the potatoes and cook them in boiling salted water until soft, about 25 minutes.
For the sauce, wash the herbs and shake dry. Chop coarsely, puree with sour cream, yogurt, lemon juice and mustard and season with salt and pepper.
Boil the eggs until hard, about 10 minutes. Drain, rinse, peel and cut in halves.
Drain the potatoes and let them steam out.
Divide the green sauce between 4 bowls and put two egg halves in each.
Serve with the hot potatoes.
